Cream of Broccoli Soup with Hummus

Zutaten / Ingredients
  • about 500 – 600g Broccoli (approx. 2 heads)
  • about 700ml vegetable broth
  • 1 small red onion
  • 1-2 garlic cloves
  • 1-2 tbsp hummus
  • 200ml (roughly 1 cup) of (heavy) cream (if you're adding crème fraîche ½ is enough)
  • salt (if necessary)
  • ½ tsp nutmeg
  • 2-3 tbsp soft goat cheese (also great as a topping in addition with some honey)
  • ½ cup of (vegan) crème fraîche
  • roasted pine seeds
  • freshly chopped parsley
Zubereitung / Instructions
  1. Cut the broccoli roughly, remove the stems and add it to a strainer to quickly rinse it with cold water. Steam the broccoli (click) for about 10 minutes. Option: Cook it in boiling water until soft, yet more vitamins are spilled to the cooking water → which you could use for your vegetable broth)
  2. Peel and chop the garlic and onions roughly. Add them to a pot with some oil in it and sauté them on medium heat. Add the broccoli and roast it for a couple of minutes.
  3. Deglaze with vegetable broth and let it boil for about 5 minutes. The heat can now be turned down.
  4. To blend the broccoli smoothly use a hand-held blender until no clumps are left.
  5. Add the cream, hummus and optional crème fraîche or soft goat cheese and season to taste with salt and nutmeg.
  6. If you like you can roast some pine seeds and chop some fresh parsley as a garnish.
