Tofu Gnocchi Bowl with Spinach Salad

Hi everyone! Hope you enjoy a lazy Sunday with little duties and good food. There’s 3 mini cheesecakes in my fridge about which I’m pretty excited. But before it gets sweet I’ve got something equally exciting and delicious for you.

For a while now I’ve been thinking about how I can show you a more personal and realistic insight of what I do. Perfect food with beautiful pretty ingredients, all styled and propped into perfection. That’s lots of fun and delicious but far from my everyday cooking style. So I thought I should show you my usual cooking style and that’s how I came up with the idea for a new project.

From my fridge

From my fridge is an attempt towards a more sustainable lifestyle that aims at the reduction of food waste, more creativity when dealing with leftover food and a raised awareness for the usage of our resources. It is my personal approach of a healthier, commendable way of life and I‘m taking you with me on this journey.

As a food photographer and Blogger I have a lot of planned recipe shootings. Naturally there‘s always lots of leftovers as I don‘t only buy ingredients for one serving but have to include some cushion for garnishes or if something goes wrong.
That leaves me with so much food all the time that I always try to use up as creatively and deliciously as possible.

This project is the result of my everyday cooking with all the food that I have left in my fridge or got cheap from the market, food sharing or my work at an organic supermarket.
No planning, just creativity, intuition and spontaneity. It shall serve you as a source of inspiration and motivation to love your leftovers and create amazing dishes with them. To be playful and combine unusual ingredient combinations or prepare a dish that’s totally untypical for a certain food type or your style

So much about the theory. I’ll try to make this project rich in variety for you, but always remember that this is in fact my everyday food and even food bloggers don’t feel like cooking (fancy) every day. Also it might get repetitive in ingredients once in a while as naturally I use up the food I have in my fridge. Being currently on a vegan low carb diet that means lots of my favourite veggies and lots of tofu, because I love tofu. Most of the time I cook with mostly unprocessed foods and I usually keep it very simple. I love bowls. My food usually goes in bowls as I find it so much more convenient to eat from than from a plate.

Let’s just see where ‘From my fridge’ will take us, shall we? 🙂

Tofu Gnocchi Bowl

My first recipe was inspired from my latest recipe that I photographed for the Project Food from Friends. Dennis showed me how to make Tofu deliciously crispy and juicy  which is why I prepare tofu for myself quite often recently. I love to go shopping in asian supermarkets and that’s where I found 4 adorable looking mini pak choi so I just had to buy them. That was my first pak choi experience and I tried to use them in as many ways as possible. Wait for the next recipes 🙂 I’m not writing down the salad recipe, you can just simply click on this link: Spinach Pak Choi Salad and add some boiled Pak Choi. You just need to boil it in salted water for 4-5 minutes. It’s awesome, trust me! 🙂

How to use up your leftovers with style.
Zutaten / Ingredients
for the Gnocchi Bowl
  • one serving of gnocchi of any kind ( I had some expired pumpkin gnocchi but you can use anything you have at home) because even food bloggers use convenience food from time to time
  • Oil for frying
  • Sesame oil to sprinkle
  • Herbs - I used rosemary, thyme, oregano
  • Spices of choice
  • Sesame
Zubereitung / Instructions
  1. Prepare the gnocchi as in the description.
  2. Prepare the tofu after this recipe: Crunchy Tofu
  3. Add spices and herbs to the gnocchi and fry it for a few minutes.
  4. Serve gnocchi in a bowl, place the tofu on top and sprinkle with a few sesame seeds and some sesame oil.

Yes, this recipe is very simple and quick. That’s just my style. When I’m hungry and when I had a long day I want to have delicious food without any unnecessary delay 😀
